Unul striga mai tare dec\u00e2t altul, indiferent dac\u0103 aveau pe tarabe salvari, zaharicale sau mere\u201d.<\/p>\n<p>Acela\u015fi str\u0103in f\u0103cea o instructiv\u0103 observa\u0163ie : \u201eAlimentul na\u0163ional din aceast\u0103 \u0163ar\u0103 exotic\u0103 pare a fi mamaliga, adic\u0103 un fel de polenta italieneasc\u0103. La loc de cinste se afla \u015fi vinul, socotit at\u00e2t elixir c\u00e2t \u015fi aliment, c\u0103ci din el se face un o\u0163et mai scump dec\u00e2t cel de corcodu\u015fe.\u201d<\/p>\n<p>Mai t\u00e2rziu, spre sf\u00e2r\u015fitul domniei lui Constantin Br\u00e2ncoveanu, clericul rus \u2013 de data asta, ortodox \u2013 Ipolit V\u00e2\u015fenski consemneaz\u0103 c\u0103 \u201eora\u015ful Bucure\u015fti este destul de mare\u201d \u015fi c\u0103 are \u201emulte pie\u0163e cu barace\u201d.<\/p>\n<p>Intr-una din aceste pie\u0163e, la o r\u0103sp\u00e2ntie de uli\u0163e, intre \u201eT\u00e2rgul de Jos\u201d (adic\u0103 primul loc de acest fel men\u0163ionat istoric, l\u00e2ng\u0103 Curtea Veche) \u015fi \u201eT\u00e2rgul Cucului\u201d, aproape de biserica \u201eSf\u00e2nta Vineri-Herasca\u201d (demolat\u0103 de Ceau\u015fescu in 1988), veneau \u201ecar\u0103le cu pe\u015fte\u201d, motiv pentru care pelerinul rus i\u015fi nota : \u201eLa r\u0103sp\u00e2ntia acelor uli\u0163e, unde mirosul de pe\u015fte proasp\u0103t se simte de la dep\u0103rtare, s-au a\u015fezat scaunele pescarilor.\u201d<\/p>\n<p>Pe la 1800, c\u0103l\u0103torul francez Charles Perigord pomene\u015fte \u015fi de \u201escaunele m\u0103celarilor\u201d, care nu mai erau a\u015fezate in \u201eMahalaua Bati\u015ftei\u201d, ci pe l\u00e2ng\u0103 \u201eT\u00e2rgul de Sus\u201d \u015fi pe l\u00e2ng\u0103 \u201eOborul Nou\u201d, respectiv locul de azi al Pie\u0163ei Obor. El face o precizare important\u0103 : \u201eIn ora\u015ful de pe malurile D\u00e2mbovi\u0163ei nu exist\u0103 inc\u0103 abatoare sau hale, ca la Paris. De aceea negustorii de vite \u015fi m\u0103celarii inchiriaz\u0103 maidane unde sacrific\u0103 animale \u015fi le tran\u015feaz\u0103. Dar lucrul acesta este ing\u0103duit de &lt;&lt;Dreg\u0103toria Comunei Bucuresci&gt;&gt; (un fel de prim\u0103rie) numai in anotimpurile reci. C\u00e2nd vine vara, animalele se taie doar in afara ora\u015fului, de frica bolilor. Chiria pentru un astfel de maidan, din octombrie p\u00e2n\u0103 in aprilie, cost\u0103 2000 de pia\u015ftri, bani cu care aici s-ar putea cump\u0103ra o pereche de arm\u0103sari.\u201d<\/p>\n<p>Un am\u0103nunt pitoresc ni-l ofer\u0103 \u015fi manuscrisul apocrif al unui alt c\u0103l\u0103tor francez, r\u0103mas anonim, descoperit de istoricul Constantin C. Giurescu, la Biblioteca Academiei Rom\u00e2ne.<\/p>\n<p>Dup\u0103 1821, in apropiere de m\u00e2n\u0103stirea \u015fi hanul \u201eSf\u00e2ntul Gheorghe-Nou\u201d, deci l\u00e2ng\u0103 pia\u0163a cu acela\u015fi nume, de ast\u0103zi, se afla \u201eS\u0103r\u0103ria\u201d sau \u201ePia\u0163a de sare\u201d. Aici veneau carele cu sare adus\u0103 de la ocne. Pre\u0163iosul ingredient culinar se vindea in drobi mari \u015fi mici, sub form\u0103 de \u201elop\u015fe\u201d, adic\u0103 a\u015fchii sau fr\u00e2nturi, dar \u015fi ca \u201esare marunt\u0103 sau praf\u201d.<\/p>\n<p>Tocmai in acest loc, un oarecare \u201eNeculai, zis &lt;&lt;Rachieru&gt;&gt;\u201d (de la rachiu !) a avut inspira\u0163ia s\u0103-\u015fi deschid\u0103 o \u201ePr\u0103v\u0103lie de vinuri \u015fi spirtoase\u201d, profit\u00e2nd de faptul c\u0103 negustorii \u015fi mu\u015fteriii, din cauza \u201eprea deselor degust\u0103ri de sare\u201d, prilejuite de fiecare trazac\u0163ie, \u201eerau mereu inseta\u0163i \u015fi dornici de b\u0103utur\u0103\u201d.
