NU MAI CRE\u015eTE ALUATUL.<\/p>\n<p>F\u0103ina o tinem intr-o covat\u0103, la loc cald.<\/p>\n<p>In acest timp op\u0103rim jumatate de pahar de fain\u0103 cu putin lapte clocotit si amestecam bine ca sa nu se faca cocoloase.<\/p>\n<p>Cand s-a mai racit faina oparita, o amestecam cu maiaua si o framantam bine, o presaram cu putina faina, o acoperim cu un \u015fervet curat si o punem sa creasca intr-un loc calduros.<\/p>\n<p>Frec\u0103m galbenusurile cu sare, punand cate o lingurita rasa pentru fiecare kg. de faina, ca sa se inchida la culuare si aluatul sa fie mai galben.<\/p>\n<p>Adaugam tot zaharul, pisat foarte fin si amestecam pana se face ca o crema spumoasa.<\/p>\n<p>In timp ce batem crema, adaugam incetul cu incetul o lingura de untdelemn si jumatate din albusurile batute. Apoi punem in faina calduta din covat\u0103, pl\u0103m\u0103deala crescut\u0103, adaugam galbenusurile frecate, lapte caldut, putin cate putin, si framantam jumatate de ora, pana ce coca nu se mai lipeste de m\u00e2ini.<\/p>\n<p>Atunci incalzim untul, grasimea sau margarina si o punem treptat in aluat, pana ce coca inghite toata grasimea.<\/p>\n<p>Turn\u0103m apoi restul de albu\u015f batut.<\/p>\n<p>Dac\u0103 aluatul este prea tare, mai adaugam lapte caldut.<\/p>\n<p>In timpul framantatului cu grasime, impaturim aluatul cand pe o parte cand pe alta.<\/p>\n<p>Acoperim coca cu un servet curat si o punem la loc calduros ca sa creasca.<\/p>\n<p>Cand coacem cozonacii, la inceput lasam focul mai mic, pentru a da cozonacilor posibilitatea sa mai creasca, apoi facem focul potrivit, nu prea tare.<\/p>\n<p>Scoatem cozonacii din cuptor imediat ce s-au copt, altfel se rosesc.<\/p>\n<p>Ca sa-i incercam daca sunt copti, nu infigem in ei pai, ca la prajituri, pentru ca aluatul se lasa daca procedam asa.<\/p>\n<p>Ii incercam numai din cand in cand, deschizand usa cuptorului incetisor, fara sa o trantim cand inchidem cuptorul.
